Food & Recipe

Hello Everyone! Welcome to SasVibe. Pho, the iconic Vietnamese noodle soup, has captivated hearts and taste buds worldwide. Its rich, aromatic broth combined with tender meats and fresh herbs creates a symphony of flavors that’s hard to resist. Making pho at home may seem daunting, but with the right ingredients and a bit of patience, you can enjoy this soul-warming dish anytime. Here’s a step-by-step guide to creating a traditional pho soup from scratch.

Ingredients:

For the Broth:

  • 2 large onions, halved
  • 4-inch piece of ginger, halved lengthwise
  • 5 pounds beef bones (a mix of marrow and knuckle bones)
  • 1 pound beef brisket
  • 5 star anise
  • 6 whole cloves
  • 3 cinnamon sticks
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1/4 cup fish sauce
  • 2 tablespoons sugar
  • 1 tablespoon salt

For the Pho:

  • 1 pound rice noodles
  • 1 pound thinly sliced beef (such as sirloin or flank steak)
  • 1/2 cup chopped scallions
  • 1/2 cup chopped cilantro
  • 2 cups bean sprouts
  • Fresh basil leaves
  • Fresh mint leaves
  • Lime wedges
  • Sliced chili peppers
  • Hoisin sauce and Sriracha (optional)

Preparation:

Step 1: Char the Aromatics

  • Preheat your oven to 450°F (230°C).
  • Place the onion halves and ginger pieces on a baking sheet. Roast them in the oven for about 15 minutes until they are slightly charred. This step adds a deep, smoky flavor to the broth.

Step 2: Prepare the Bones and Meat

  • In a large stockpot, bring water to a boil. Add the beef bones and brisket, and blanch for 5 minutes. This step removes impurities.
  • Drain and rinse the bones and brisket under cold water to remove any scum or impurities.
  • Clean the stockpot, then return the bones, brisket, charred onions, and ginger to the pot.

Step 3: Toast the Spices

  • In a dry skillet over medium heat, toast the star anise, cloves, cinnamon sticks, coriander seeds, and fennel seeds until fragrant (about 2-3 minutes).
  • Add the toasted spices to the stockpot.

Step 4: Simmer the Broth

  • Fill the pot with water (about 6 quarts), ensuring the ingredients are fully submerged.
  • Add the fish sauce, sugar, and salt to the pot.
  • Bring to a boil, then reduce the heat to a gentle simmer. Simmer for at least 6 hours, skimming any impurities from the surface occasionally.
  • After 6 hours, remove the brisket and set aside. Continue to simmer the broth for an additional 2 hours if you have time. The longer it simmers, the richer the flavor.
  • Strain the broth through a fine-mesh sieve into another large pot to remove the solids. Discard the bones, onions, ginger, and spices.

Step 5: Prepare the Noodles and Beef

  • Cook the rice noodles according to the package instructions. Drain and rinse under cold water to prevent sticking.
  • Thinly slice the reserved brisket and set aside.

Step 6: Assemble the Pho

  • Divide the cooked rice noodles among serving bowls.
  • Arrange slices of brisket and raw beef over the noodles.
  • Ladle the hot broth over the noodles and beef, ensuring the raw beef is cooked by the heat of the broth.
  • Garnish with scallions, cilantro, bean sprouts, basil, mint, lime wedges, and sliced chili peppers.
  • Serve with hoisin sauce and Sriracha on the side for additional seasoning.
