When it comes to preparing Hilsa, whether it’s the classic mustard preparation or the steamed version, these methods are quite popular in Bengali households. However, traditional recipes often include various vegetables that can elevate the flavor profile of the dish significantly. Ingredients Required:

  • 1 medium-sized Hilsa fish
  • 1 winter squash (chhal kumra)
  • 2 cups of coconut milk
  • 2 teaspoons turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons cumin paste
  • 2 tablespoons onion paste
  • 2 cups chopped onions
  • 5-6 green chilies
  • 2 teaspoons sugar
  • Oil and salt to taste

Preparation Steps:

  1. Prepare the Winter Squash: Start by peeling the winter squash and cutting it into round pieces. Rub it with salt and turmeric, then lightly fry it in hot oil until golden.
  2. Marinate the Fish: Cut the Hilsa fish into large pieces and marinate it with turmeric.
  3. Saute Onions: Heat about 2 tablespoons of oil in a pan and fry the chopped onions until they turn golden. Remove half of the fried onions and set them aside for garnishing.
  4. Combine Spices: In the same pan, add the onion paste, cumin paste, and all the powdered spices. Sauté these together for a few minutes.
  5. Add Coconut Milk: Pour in the coconut milk and bring it to a boil.
  6. Incorporate the Vegetables and Fish: Once boiling, add the fried winter squash and the marinated Hilsa pieces. Season with salt at this stage.
  7. Simmer: Allow the mixture to cook on low heat for about 4-5 minutes. Then, add sugar and green chilies. Reduce the heat further and let it simmer until the oil rises to the surface.
  8. Finish and Serve: Once the dish is ready, remove it from heat and garnish with the reserved fried onions. Serve hot with steamed rice.
