    • ½ cup (120 ml) water
    • ¼ cup (60 grams) custard powder
    • Bread crumbs from 6 slices of white bread

Preparation Steps:

  1. Making the Caramel:
    • Heat ½ cup of sugar in a large pan over medium heat. Do not stir; let it melt and caramelize into a golden amber color.
    • Quickly pour the caramel into a 6-inch cake pan, swirling it to coat the bottom evenly. Be careful as the caramel is extremely hot.
  2. Preparing the Custard:
    • Mix ½ cup of water with custard powder in a small bowl until smooth and lump-free.
    • In a saucepan, combine milk, sugar, and vanilla extract. Bring to a simmer over medium heat.
    • Gradually add the custard powder mixture to the milk, stirring constantly until it thickens.

  3. Assembling and Steaming:

    • Place the cake pan on the wire rack, cover the kadhai with a lid, and steam on low-medium heat for 25 minutes.
  4. Cooling and Demoulding:
    • Allow the caramel custard to rest at room temperature for 15-20 minutes after steaming.
    • While still warm, place a plate over the cake pan and invert it to release the custard. The caramel will create a beautiful glaze over the custard.
