Ingredients:
- 1 kg mutton, cut into pieces
- 2 cups basmati rice
- 2 large onions, thinly sliced
- 1 cup yogurt
- 2 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 4 green chilies, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tbsp garam masala
- 1 cup chopped mint leaves
- 1 cup chopped coriander leaves
- 4 tbsp ghee or oil
- 1 cup fried onions
- Salt to taste
Whole Spices:
- 4 cloves
- 4 cardamom pods
- 2 cinnamon sticks
- 2 bay leaves
- 1 tsp cumin seeds
Method:
- Marinate the Mutton: Combine mutton pieces with yogurt, turmeric, red chili powder, half of the ginger-garlic paste, and salt. Marinate for at least 2 hours or overnight for best results.
- Cook the Rice: Rinse the basmati rice and soak for 30 minutes. Boil water in a large pot, add salt, and the whole spices. Cook the rice until it is 70% done, then drain and set aside.
- Prepare the Mutton Gravy: Heat ghee or oil in a large pan. Add remaining ginger-garlic paste, green chilies, and onions. Sauté until golden brown. Add tomatoes and cook until they soften. Add marinated mutton and cook on high heat until the mutton is browned.
- Spice it Up: Add garam masala, mint, and coriander leaves. Mix well and cook until the oil separates from the gravy.
- Layering the Biryani: In a heavy-bottomed pot, start with a layer of mutton gravy, followed by a layer of partially cooked rice. Repeat until all the rice and mutton are used up. Top with fried onions and a few mint leaves.
- Dum Cooking: Seal the pot with dough or a tight-fitting lid. Cook on low heat for 30-40 minutes. Ensure the steam does not escape.
- Serve: Once done, let it rest for 10 minutes before opening. Gently mix the layers and serve hot with raita or salad.
