Hello Everyone! Welcome to SasVibe. Mutton Biryani is a celebrated dish in Indian cuisine, known for its rich flavors and aromatic spices. Here’s how you can create this culinary delight at home.

Ingredients:

  • 1 kg mutton, cut into pieces
  • 2 cups basmati rice
  • 2 large onions, thinly sliced
  • 1 cup yogurt
  • 2 tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 4 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tbsp garam masala
  • 1 cup chopped mint leaves
  • 1 cup chopped coriander leaves
  • 4 tbsp ghee or oil
  • 1 cup fried onions
  • Salt to taste

Whole Spices:

  • 4 cloves
  • 4 cardamom pods
  • 2 cinnamon sticks
  • 2 bay leaves
  • 1 tsp cumin seeds

Method:

  1. Marinate the Mutton: Combine mutton pieces with yogurt, turmeric, red chili powder, half of the ginger-garlic paste, and salt. Marinate for at least 2 hours or overnight for best results.
  2. Cook the Rice: Rinse the basmati rice and soak for 30 minutes. Boil water in a large pot, add salt, and the whole spices. Cook the rice until it is 70% done, then drain and set aside.
  3. Prepare the Mutton Gravy: Heat ghee or oil in a large pan. Add remaining ginger-garlic paste, green chilies, and onions. Sauté until golden brown. Add tomatoes and cook until they soften. Add marinated mutton and cook on high heat until the mutton is browned.
  4. Spice it Up: Add garam masala, mint, and coriander leaves. Mix well and cook until the oil separates from the gravy.
  5. Layering the Biryani: In a heavy-bottomed pot, start with a layer of mutton gravy, followed by a layer of partially cooked rice. Repeat until all the rice and mutton are used up. Top with fried onions and a few mint leaves.
  6. Dum Cooking: Seal the pot with dough or a tight-fitting lid. Cook on low heat for 30-40 minutes. Ensure the steam does not escape.
  7. Serve: Once done, let it rest for 10 minutes before opening. Gently mix the layers and serve hot with raita or salad.
